Coconut Bliss Balls For Mom
Something sweet, healthy and a great gift for mom on mothers day!
+ they're super easy to make and you can add a seasonal glaze on the side to dip
Ingredients :
Coconut Bliss Balls
- 12 Medjool dates

1 cup almond meal

1/2 cup Shredded Coconut, plus 1/3 cup extra for rolling

1/3 cup coconut oil

1 tablespoon chia
- 3 tabelspoon of your favorite dried fruit (if desired, we love using goji berries or mangos)
Directions

Place dates in a medium bowl and soak in warm water. Drain and discard seeds.

Process dates, almond meal, shredded coconut, coconut oil and chia seeds until mixture comes together. Transfer to a bowl and stand for 20 minutes for chia seeds to soften.

Place remaining coconut in a shallow dish.

Roll level tablespoons of mixture into balls. Roll in coconut to coat.
Citrus or Lilikoi Glaze
- 1 cup of sifted confectioner's sugar
- 3 tbsp passion fruit juice/pulp
- pinch of salt
or
- 1 teaspoon lemon or orange zest
- 2 1/2 tablespoons freshly squeezed lemon or orange juice
- pinch of salt
Directions
- Add the powdered sugar, zest, juice, and salt to a medium mixing bowl and whisk until smooth.
Package for mom and give to her on Mother's Day!
