Sending Aloha To Our Community through ‘Honey Roasted Carrots’ + Recipe

Our team of farmers, chefs, delivery drivers and community came together this past week during flooding and landslide’s that occurred throughout the north shore of Kauai. Watching and participating during this time has been inspiring as well as eye opening to the small gestures of those who have come to support. During the road closer our friends @ Nourish Kauai reached out to see if we could support the North Shore community as well as their Kapuna meals program and we said ‘YES!’. Our team was in the kitchen washing, peeling, chopping, roasting, serving, labeling and delivering hundreds of lbs and over 1,600 people from Haena to Kalaheo these delicious ‘Honey Roasted Carrots’ this week.

Here’s our simple & nutritious carrot recipe that can be paired with almost anything or eaten as a snack hot or cold

  • 2 lb carrots washed and peeled (or unpeeled)
  • 3 tablespoons honey
  • 1/3 teaspoon salt plus more for seasoning (we like to blend in herbs and squeeze in some fresh lemon juice to make a seasoning salt to use in this portion)
  • Cracked black pepper
  • 3 tablespoons fresh chopped parsley


  1. Preheat oven to 400’F
  2. Line baking sheet with parchment paper (set to the side)
  3. Make sure carrots are chopped and peeled if desired. We found cutting carrots in half, then diagonal slicing gives a great texture for roasting and serving
  4. In a mixing bowl toss cut carrots with seasoning salt, honey and black pepper
  5. Place carrots on the parchment lined baking sheet, make sure they are spread out where carrots aren't touching one another or barely touching as they will cook more evenly and give a crispy tasty edge
  6. Place baking sheet of carrots into preheated oven for 20 minutes until fork-tender and a little carmelized brown on the sides
  7. Take out of the oven, toss roasted carrots in a bit more seasoning salt, pepper and a dash of honey with the chopped parsley
  8. Serve on your favorite dish and enjoy!
