Verde Kale, Pumpkin & Goat Cheese Enchiladas
This delicious mix of local Kaua'i grown produce and Organic ingredients is a simple and nurtitious dish for friends and family. We air on the side of healthy and simple when creating these dishes oh and of course local seasonal produce and Organic ingredients. Here's a great recipe to try at home or order for next weeks delivery.
Vegan and Vegetarian options available ... we use a cashew cream sauce to replace the cheeses
'Verde Kale, Pumpkin & Goat Cheese Enchiladas'
Serving size 4-6
2 cups pulled kale
6 flour tortillas
2 Tbsp coconut oil
1/2 white onion
1/4 cup cilantro
2 oz goat cheese
1/2 c cheddar cheese grated
13 oz (1 can) Verde salsa (we make from scratch but you can use a canned, it's good and saves time)
2 slices butter (for carmelized onions)
1 cup roasted pumpkin
Directions:
preheat over 400'F, Peel, de seed, and cut the pumpkin into 1/4 pieces to roast in the oven. Toss in olive oil and salt (we use our Bati beco salt loaded with fresh herbs and lemon) bake in oven for about 30 min until roasted. Take out of over to cool.
sautee tortillas in coconut oil until slightly browned, place to the side to cool
slice onion and sautee on low in butter for 30 min stir occasionally, heat needs to be really low until the onions are opaque, brown and give off the carmelized smell
pull kale from ribs and place to the side
**if you're adding a protein like chicken, make sure to cook beforehand... we like to toss chicken in chili powder, garlic, hawaiian chili peppers, olive oil & bati beko before placing in the baking pan and then bake at 350'F for about 45 min**
Special verde sauce, we usually make from scratch our 'Verde Smulsa' with a variety of peppers and tomatillos, roast and blend but you can also buy the store bought cans theyre pretty good and recommend the 'Organic' version
Add the insides : kale, roasted pumpkin, carmelized onions, 1/2 amount of both cheddar and goat cheese, **chicken if using, 1/2 amount of verde sauce, 1/2 amount of cilantro stir and stuff the the tortillas, wrap and layer into the baking pan
Cover the stuffed tortillas with the rest of the verde sauce, rest of the cheese and cilantro
Bake at 350'F for 30 minutes
Add more cilantro to the top and maybe some avocado, serve and we hope you enjoy!
